Chicken with olives and feta cheese

Chicken with olives and feta cheese by Elaiouvios

Ingredients:

  • 1 chicken, in portions
  • ½ cup extra virgin olive oil
  • 2 onions, chopped
  • 2 cloves garlic, sliced
  • 1 tsp. tomato paste soup
  • 1 box sweet sugar
  • 1 tsp. soup spoon dry or fresh oregano
  • 200ml tomato juice
  • 250ml homemade or refrigerated chicken stock
  • 10-15 mixed olives
  • 200g feta, crumbled
  • salt, freshly ground pepper

execution:

  • In a wide pot or deep pan, heat the olive oil and sauté the chicken portions on all sides, turning them with a fork.
  • Add the onions and garlic and saute for 2 minutes until they soften a bit.
  • Add the paste, sugar, pepper and oregano and lower the heat.
  • Add the tomato juice and stock, lower the heat and simmer until the sauce thickens, about 40 minutes.
  • About 10 minutes before removing the pan from the heat, add the olives and feta cheese and cook until the cheese melts.
  • Serve the food hot.
