Chicken with olives and feta cheese
A Mediterranean delight featuring tender chicken simmered with juicy olives, aromatic herbs, and topped with creamy feta cheese. Perfectly balanced flavors for a healthy, flavorful meal.

Ingredients:
- 1 chicken, in portions
- ½ cup extra virgin olive oil
- 2 onions, chopped
- 2 cloves garlic, sliced
- 1 tsp. tomato paste soup
- 1 box sweet sugar
- 1 tsp. soup spoon dry or fresh oregano
- 200ml tomato juice
- 250ml homemade or refrigerated chicken stock
- 10-15 mixed olives
- 200g feta, crumbled
- salt, freshly ground pepper
execution:
- In a wide pot or deep pan, heat the olive oil and sauté the chicken portions on all sides, turning them with a fork.
- Add the onions and garlic and saute for 2 minutes until they soften a bit.
- Add the paste, sugar, pepper and oregano and lower the heat.
- Add the tomato juice and stock, lower the heat and simmer until the sauce thickens, about 40 minutes.
- About 10 minutes before removing the pan from the heat, add the olives and feta cheese and cook until the cheese melts.
- Serve the food hot.
